In terms of graphics and processing, probably Mario Galaxy 2. Although this is really an irrelevant question when discussing the Wii; since this is hardly the goal of developers on that platform. Besides, the best looking Wii games are games that probably require very little of its processing capabilities - many 2D games are stunning on the Wii.
In terms of everything else; Zelda Skyward Sword.
