I don't see NSMB U at launch either, but it'll be a strategic minor delay, nothing major.
Like Wii U launches Nov. 11th in the US and then NSMB U launches Nov. 25th in time for the Black Friday rush. Something like that. Give other games a chance to grab some sales, Mario is something that will sell for years so no need to make things harder for third parties than they already are.
Really, now that you add Madden NFL 13 and FIFA 13 to the launch day, and perhaps Call of Duty: Black Ops 2 as well and perhaps other titles that we haven't had confirmed yet either (007 Legends has been rumoured and would make sense. We could be looking at:

Pikmin 3
Zombi U
Call of Duty: Black Ops 2
Assassin's Creed 3
Rayman Legends
Madden NFL 13
FIFA 13
NBA 2K13
Tekken Tag Tournament 2
007 Legends
Just Dance 4
Mass Effect 3
Ninja Gaiden 3
Batman: Arkham City
Even if some of these are old games, a lot of them are not and two of them (AC3 and BLOPS2) are the biggest 3rd party releases of the year. This is not even counting content from Japanese developers that might make launch, basically TTT2 is the only game along with that Tanks! game that we know of but there's almost definitely more Japanese stuff coming too.
