I feel the exact same way as you, so you're definitely not alone. I find the art style and graphics extremely boring, bland, and childish.
Nintendo games used to blend the artistic line between fun/kiddy/mature very well, but nowadays they don't. I think part of the problem is that higher console power allows you to express your game and characters in more detail and also leaves less to the user's imagination. By leaving less to the imagination and pushing a certain style on people, you alienate a good portion of them.
