I always turn auto-aim off when the game allows me to and I'm far more precise than any motion FPS I've ever played.
Wiimote is just too shaky, dual analog is the way to go (if you don't play on PC).
Haven't tried Move yet, but I'd guess it's similar to Wiimote.
