Will the next Zelda use motion control or the Wii U controller?

After enjoying the last Zelda I can say that going back to buttons-only will feel like a step back, at least to me.

That would be the best way to play it. Having the WiiU controller resting in your legs (for example) showing the inventory or the map while playing with the wiimote+.
