fairly certain there are races where the number of cars on the track are more than 16 but you won't see them all on screen at once... something I noticed a few months back during the cam videos at E3 shows etc..
also forget the demo I got my game today.. playing it for a little while but gotta head to uni soon... dayum I love the user interface!!! sooooo slick :o

those of you installing the game to the HDD. My advice is to install disc 1 first. have your first couple of races. When you get to the menu screen on the far left it will give you an option to install disc 2. Once you have installed this that option will be replaced with marketplace menu
