Zach and Wiki was a pretty good adventure game that strictly used the Wiimote's pointer and motion controls, but I agree that there's alot of wasted potential on the Wii.
First of all the only games that really demonstrated the full potential of the Wiimote were Wii Sports and Wii Sports Resort IMO. Most other games feature some form of waggle controls as a form of button replacement but do nothing to enhance the actual gameplay experience.
And secondly, the one big problem with the Wiimote and its motion controls is that it didn't translate too well for most "core" game franchises. Most of the time it felt like they were tacked on as a gimmick (see: Mario Kart, NSMB Wii, DKC Returns, and even Mario Galaxy). All of these games would have played just fine with the use of a "traditional" 8-button, dual analog controller without the use of motion controls. The only Wii game that managed to perfectly blend the Wiimote's motion controls and pointer interface seamlessly with the core game design was Metroid Prime 3 IMO.

You know I was always wondering why no one ever used the dollar sign for $ony, but then I realized they have no money so it would be pointless.
