You don't even need to use the slingshot. Mad Scrubs are slow enough for you to just walk up and wack them on the head with your sword.
In addition, there are at least two Deku shields to find in the Master Quest version of that dungeon, and a Hylian shield on top of that. I guess the designers didn't expect you to run back to Hyrule Market and get one, knowing that it (more than likely) wouldn't be the player's first run through the game.
