These are my modifications to other people's ideas, before I list my own ideas.

Blood, and a darker theme(I don't care. Majora's Mask was dark and perfect that way, all I care about is that the theme blends perfectly with gameplay. Whether it's dark or colorful)
Twilight Princess style graphics(Only on an engine that can easilly do L.A.Noire-like facial animation with graphics => Uncharted 3 & others at this graphic height. Or else, give me Skyward Sword like graphics from now on!)
Voice acting(but Link never talks. He always gets interrupted when he's about to!)
A deeper story(abduct the writer of The Legend of the Seeker series to do this. That show oozes of 'this is what a zelda story should be!'...well, almost)
Make it more difficult(tougher combat, more innovative puzzles{following the owl past the chasm in Majora's Mask, anyone}, not neccessarily tougher puzzles)
For it to be developed by Retro Studios(I don't care who does it, as long as they're this competent)

Non-linearity. I want to complete dungeons in my own order(That's what side quests are for! Majora's Mask got this right. Keep the main quest linear so it can be super polished. Scripted events are not always a bad thing.)
No running around the starting village for thirty minutes. Just drop me off in the middle of Hyrule with no idea where to go, thanks.(Only do this if they can pull it off to make a memorable start)
An interesting story that is told in a similar fashion to Metroid Prime or Bioshock, i.e. without cutscenes.(No thank you! I want better cut scenes than previous Zeldas. Not longer, just more memorable and more rewatchable. Then still add the Metroid aspect of finding large aspects of the story without cutscenes, but don't use this to rule out cut scenes. Marry the two approaches properly)
