Definitely not Cheez Whiz, but I'm not against American Cheese even if both of them are processed cheeses. However, it can't be the individually wrapped crap they sell though that is very similar to Cheez Whiz, it has to be a quality brand like New Yorker that is more of an unprocessed cheese. As for Provolone, I'll eat that too and it is probably my preferred cheese for sandwiches, but I prefer a good American Cheese on a cheesesteak.
So I guess my answer is whatever I have in the fridge
