Of course Sakurai had more things he wanted to put in Brawl: all developers wish they had more time to put more stuff in their game. Having a deadline doesn't automatically make a game "rushed" though, and I can assure you that Brawl was not rushed in any way. Shoot, I doubt there was much space left on the disc for more content anyways!
Regarding Miyamoto's interest, you may be right, but then I don't think he had a huge role in Pikmin 2, and you like that title more than the original. Miyamoto's not the only good developer Nintendo has, and tons of great Nintendo games have only limited input from Miyamoto.
