Shooter - Killzone 2, Call of Duty: Modern Warfare 2
Horror - Resident Evil 5 (yea, I know it is more action, but whatever 
), Dead Space
Fighter - Super Street Fighter IV (out soon, or you could just get the non super version)
Action - Uncharted (1/2) Ratchet (crack in time / tools of destruction), Assassin's Creed (II is supposedly a lot better, but I loved the climbing and stealth in the first one)
Platformer - Prince of Persia, LittleBigPlanet (floaty physics, so make sure you don't mind that as it isn't Mario)
Also, if you are going for cheap, I would recommend a new PS3 for $300, and then any two games used from an Amazon seller. They are blu-ray discs so they are scratch resistant, and Amazon grantees the purchase. Most of the games I listed would cost $20 used, for a grand total of ~$340 which would save you ~$60
