A vanilla game typically has a few mafia (no special abilities beyond night kill), a doctor, a cop, and maybe 1 extra roll, but a very basic game. I would suggest you play the vanilla game unless you don't mind getting lost and possibly killed night 1 due to crazy people. Also, this is your first game, so again go with vanilla.
The other game will be essentially a mafia game with a twist. Add any role you can imagine, or from a set of "standard" roles that people have been using for a while. The game is a lot more complex as people can make up roles to try and get away with stuff, and no one really knows if it's true or not.

I'd prefer "spirited" but I'll play vanilla if it needs extra people.
