Hard drives are dirt cheap for companies. That would save them perhaps $5. The only reason it worked for Microsoft was that only Microsoft HDDs work on a 360. Any 2.5" HDD works on a PS3, so that would just fail miserably.
They can't take out Bluetooth, because the controller needs it.
WLAN...maybe. But I'm not sure that would cut $120 off the cost...
