I haven't played completely through New Super Mario Bros. Wii yet so I cannot say for certain that I like Mario Kart Wii better but...
...yeah I can. Mario Kart Wii is the best game of this generation for many of the reasons that you listed. I don't know about it helping you keep your sanity though. I nearly went insane getting a three star ranking and went nuts 756 times over getting a 9999 VR.
I will say that New Super Mario Bros. Wii is a wonderful game though and is on par with any other 2D Mario game IMO. This is saying a lot.
