I somewhat agree with you on MarioKart.  A joystick is definitely more accurate, I guess I just disagree by thinking the motion controls are accurate "enough" and enough more fun to make it worth playing that way.

 

Galaxy, for the most part, doesn't use motion controls at all.  There's the shake you give for a second jump, but that could just as easily be replaced with pressing a button (which would be more accurate, as well).  Have you ever seen the Zero Punctuation review of Galaxy?  While I like the game more than he did, I think he was spot on with the controls.
I did enjoy the Manta Ray levels (and rolling the ball, to a lesser extent), but honestly those felt tacked on. Like "Hey, this is on Wii, we should add a motion control level or 2."
