It's hard for a racing game to do that with over 1000 cars all practically perfect. Interior and exterior car designs. Damage to those cars. Driver animations. Head tracking. Getting tracks and scenery perfect. Weather conditions. Day/Night cycles. Etc... All while keeping a steady 60fps framerate.
GT5 deserves just as much mention as any other game when it comes to graphics capabilies, IMO.
