I don't think motion control would work with traditional Star Fox properly. Those Arwings are highly maneuverable, trying to govern that movement with a Wiimote would be tedious, especially since there are a lot of different controls that the Wiimote would lack.
Wiimote with pointer + nunchuck, though, would work.
Pilotwings would be ideal with the Wiimote, however, and was the thing I thought of IMMEDIATELY when I played Wii Sports Resort Airsports.
