Because they can't afford giving it cheap. PS3 is still very expansive to make.
Sony is a corp, their goal is not increasing marketshare then going bankrupt the same year. Their goal is profit.
360 is cheaper to produce, it's logical MS cut the price earlier. Plus they had no choice either, the installed base gap was quickly shrinking at that time.
