No way.

Just in a shooter like Killzone 2, you need to:

*Various Actions*

...which is why the PS3 and Xbox 360 have little appeal to new markets. The barrier to entry is too high because Sony and MS have made their consoles geared towards the relatively few people who are hardcore shooter fans.

Why would a shooter that only has three buttons and one stick (Move+Aim on one stick, Fire, Jump, Change Weapon) be any less fun if the game engine was the same? But it would be a lot more accessible.

Firstly, you can't move and aim with one stick. You need two, or at least a stick and a D-Pad.

Of course it would be less fun, for shooter fans, anyway. Would Shadow of The Colossus be as much fun as it is with just the sword and no bow or horse? How about God of War with only one type of attack?

More accessible, definitely, but once you get used to it, using 12 buttons and two sticks is a breeze.
