Something I noticed on my recent playthrough in regards to the controls:

-You can use the right analog stick to look around. if you initiate aiming while looking with the right analog stick, you will aim in that direction. this allows you to aim in the direction you want faster.

About the Wii version, I just don't think it would transition well. Most people who make the comparison in favour of the Wii say that it's graphics or gameplay, but I don't think it's that easy. You are oversimplifying by pretending that all that would change is the graphics, and that there would be no other omissions.

While the game itself might be doable, local splitscreen co-op would not be possible on the Wii. For a system with such an emphasis on local multiplayer, the omission of split screen would severly gimp that version. The fact that even built from the ground up wii games like the conduit don't have split screen should reinforce this idea.

I'm also curious as to how voice chat would be implemented for online play. AFAIK, only an extremely small number of Wii games support online voice chat with the proprietary wii-speak (correct me if i'm wrong), so capcom would be treading new ground with the Wii version of RE5 if they chose to implement it. Online play would be gimped without some sort of effective communication.

The graphics. Right, I understand that Wii owners prefer wiimote controls over good graphics, but at what point would those reduced graphics become a liability? There are vehicle sections, at least one sniping part, and other parts that would most likely be modified or omitted to work. I doubt it would be worth the effort for the end product, and that effort would be better spent on something Wii-specific.
