They have a good thing going. They constantly rehash ideas with a new coat of paint and some upgrades every few years and suckers like us keep buying them, thus generating craploads of money.
Doing a full console version would take more time, money and resources, just to achieve an outcome that wouldn't be much better financially than what they get with the handheld versions.
