It sounds good in theory, but as a game developer, and more importantly as a company, it is good business sense to release all versions of the product at the same time. If, say, they released Star Wars: The Force Unleashed earlier on Wii than other systems, more people would buy that version, and there would be fewer sales of the others. This hurts both your bottom line and your relationship with the manufacturers of said other systems.
