If they set the game up like they did for System Shock 2, it will have several difficulty modes, so don't worry (they do it with most of their games; I can almost guarantee they'll do it here). The reason most single-player games are easy is because they're semi-mindless, something Bioshock is very far from being. Key-words here are "thinking-man's shooter." Just pulling the trigger at anything that moves will not work. Using the wrong ammo on the wrong enemy, or using the wrong plasmids for the situation, or not taking the time to set up a trap or outsmart the enemies or search out resources will get you fried in no time.
Poor AI is also part of the problem with many shooters, and the AI in this game is gonna be revolutionary, so no worry there either. Also, sometimes the single-player campaigns for many shooters are easy only because you've had to get so good at the game to be able to stand your ground against human opponents in the multiplayer mode. The single-player AI cannot compare to the wit and randomness of a real human mind (Not to mention that single player campaigns are typically meant to be easier, so new players can get used to the controls and gameplay elements, and prepare themselves for the real game - the multiplayer).
Side note - With System Shock 2, they released a late patch that added co-op multiplayer to the game (I probably played the game 4 more times just with different friends, aside from all the times I went through it in single player before that)... they may decide to do something like that here sometime down the road, but no guarantees on that.

Prediction: Wii passes 360 in US between July - September 2008. (Wii supply will be the issue to watch, and barring any freak incidents between now and then as well.) - 6/5/08; Wow, came true even earlier. Wii is a monster.
