Oh dear...is this at max settings? I'm not usually one to complain much about gfx, but that's one ugly looking game, given when it was released.

I wonder what this says about me - I have a 1070 that can kick my PS4's butt, yet I don't think I've really experienced not finding the PS4's graphics acceptable.

I think it probably says that you appreciate good graphics, but you care more about the game you're playing.

That and it helps that playing a lot more on the console side than the PC side shows you're perfectly fine with the former than the latter.
I've been playing mostly PC only since 2012 and I've noticed a shift in my expectations over the years.

My expectations aren't too high. For me, as long as the graphics don't make my eyes bleed (like those 8-bit inspired games, God I hate them!), I'm fine.

I like me some 8-32 bit games like Stardew Valley, Minecraft, Starbound etc, but I also love me some detailed games and texture work as well like Star Citizen, Ark etc.
If a game is supposed to be AAA though, it had better have some decent texture detail to it.

Oh, I'm not talking about games like Stardew Valley or Starbound. I'm perfectly fine with the graphics of those games (and SV would be more like 16-bit rather than 8).
I'm mainly talking about those games that, with the excuse of using an 8-bit or retro style, are made by lazy people and have ugly graphics. I'd like to post an example, but I don't remember any now.
