So base this on character roster over gameplay, ect.

For me it has to be Mortal Kombat

well, I figured that you were really talking between the traditional style fighters (both 2D and 3D though).

Anyways, if I have to chose one it would be between street fighter and Mortal Kombat. I never really cared for any of the other fighters, though I did like Soul Calibur II.
