The game that inspired me to make this thread is Folklore. I reckon it makes really good, non-gimmicky use of the sixaxis. What I mean by that is the inclusion of motion controls feels like a natural and integral part of the game, not just some tacked on element that doesn't really play a part in the primary gameplay. It's also a compulsory part of gameplay, in that you can't choose to turn sixaxis functionality off or on depending on your gameplay preferences (like you can for some racing games). And finally it adds another dimension to the gameplay, even if it isn't a revolutionary new dimension. If you've never played Folklore I can't be bothered describing how the sixaxis works other than to say it's an integral part of the combat mechanics, so I suggest you download the demo and find out for yourself.
Yeah this is a bit of a plug for Folklore too. 
I quite liked the challenge of using the sixaxis controls while doing the puzzle elements of Ratchet and Clank: Tools of Destruction. But this use is no where near as integral to overall gameplay as in Folklore, and you can turn it off and elect to use the analog stick instead.
An example of tacked on gimmickry (I'm disappointed to say) is Uncharted. If memory serves, you use sixaxis functionality twice and it's only to help you balance while walking across logs. It really plays no part in the principle gameplay and it seemd like a bit of an afterthought.
Something that might be somewhat in between is Heavenly sword where you get to control crossbow bolts while in flight. It's a fun element, and more integral to gameplay than balancing while walking across logs. But it's not something you use at all times, only when doing crossbow shooting missions.
There's that bowling game, but I've never tried it, so I don't know whether it's good use or not. There's also Warhwak, but again I haven't played so don't know how good it is.
So what other games do you think makes good use of sixaxis motion control?
