Guitar Hero easily takes the cake
Honorable mentions:
Call of Duty
ALL sports games
Wii series knock offs from crappy third parties (all the fitness and sports compilations).
In Japan, Final Fantasy, Tales and Powapuro have all had it pretty bad this gen. Rockman's cooled off at least, but now we aren;t getting any platformers, just crappy RPGs. :(

Final Fantasy may not be oversaturated but it is without a doubt being milked for every penny, or more specifically, Final Fantasy VII is being milked for every penny and it's already been said they want to milk FFXIII for every penny (my words, paraphrasing).
Anything with singing or "playing instruments" imo.
And Tomb Raider, just stop already.
The Duke Nukem PC Series...in the past 13 years there's been .4 games released. I'm glad they called off duke nukem forever, cause it was getting to the point where you couldn't go to a strip club anywhere with out hearing "Shake it baby"
All I would say for the moment is Guitar Hero and CoD games. The sports titles could be there too but they are kind of expected to have yearly releases.
Why the hell is Halo saturated? The only offending evidence so far is ODST, and 1 game in the wrong direction hardly makes it oversaturated.
And in FF's case, you cant really call rereleases on DS market saturation? In that sense, every franchise with age is saturated via emulation, for free to boot. FF remakes causes no more saturation than Mario on NES and SNES emulators.
But Insomniac needs to cool off the Ratchet and Clank series; it's getting to the point where the games are being overlooked and under appreciated.
PSN: chenguo4
Current playing: No More Heroes
I think its easier to name the franchises that AREN'T oversaturated ;)
However, most of these franchises will continue to sell well even as the games themselves turn to rubish. Gamers today are not smart consumers and they generally buy what their friends are playing regardless of the quality. So unfortunately innovation and creativity is stifled in exchange for incremental improvements and upgrades that constitute most sequels and franchise releases. This is why I love the MODDING and independent scenes where true innovation and creativity rule and not profits :)
Current Favorites:
