Actually, thinking about this - and sorry to say this - I'm not sure you have the right console. As Badassbab states maybe you should check out the Wii if you don't have one. I'm not sure the experience (at least currently) offered by either PS3 or 360 would appeal to your tastes.

try downloading a bunch of demos. if nothing appeals to you, ditch the ps3 and just get a wii, you'll probably find something there you'd like.

but before you do ditch the ps3, try flower, at first i thought it was stupid, but when i started playing, i found it quite enjoyable.

but what ever you do avoid ironman like the plague!

I am quite picky about intuitive/fun controls myself and I love the sega/nintendo games. Even though I don't have a ps3 (you should have gotten a wii), I do play it at some friend's place once in a while. Here are my thoughts:

Killzone 2: if you had trouble aiming in Uncharted, don't even bother with this game. It took me 5 minutes to aim on each target. I really, really hated the controls for this game.
Infamous: Interesting in the beginning but became very repetitive in a few hours. At least it lasted a few hours.
Valkyria Chronicles: You should try this one
Little Big Planet: Also didn't think it was cute. But I liked playing it with a friend. Had some fun, but didn't feel like coming back to it so much.

I cant believe you guys are telling him to get VALKYRIA CHRONICLES.. he is looking for a game with easy controls -_-

Errr, how are controls for VC hard? You can take all the time you want to aim. You can use the directional pads for more accuracy...

other than the sega genesis collection i don't think you will like much of anything for the ps3. i would agree that a wii sounds more like your style, as you don't seem to care for next gen games. most games involve good motor control and multiple buttons...that's kind of a big thing for us.

Looks to me like none of you have played a wii..

If I am buying a console I know why I am buying it. I know some games I want definetly to play. My question is why did you bought a PS3 ? Isnt a 360 or a WII more appealing to you ?

To Controls I never had a problem with Controls in a PS3 Game they work more then perfect for me. I think accessable controls have Uncharted 1-2 Killzone 2 Lost Planet 2 .... if I think about it pretty much every PS3 Game I got, I saw the Layout which button which Action and I started to play without problems even without thinking about it.

You should buy a WII or wait for the PS3 mote which will be pretty much the same thing.

And if I were you I would buy me a nextime a console after I knew that the games appeal to me.

Edit: Sega want to release some old Sega Games on PSN. The problem is Sega is not as good as it was in former times. Atleast thats my opinion. I loved the DC even the Saturn was a good console in my eyes mainly because the Controller was good for Beat em Ups and Sega hat definetly a Edge over PS in the beginning.

But inuitive Controls ? The DC Controller Hurt my thumb pretty much. The Controls were never an advantage in my eyes. If you liked Sega that much and you want good graphics then PS3 is maybe the best decision. FF 13 FF vs 13, Yakuza 3 and 4, Resonance of Fate. Didnt released Sega Nights on PS3 or was that on WII ? Phantasy Star and Sega want to release all former Games on PSN hopefully ShenMue 1-2 and maybe a successor. But as I know Sega they try to make money of their old Big Hits best axample Sonic maybe they will make a successor to Panzer Dragoon Saga on PS3 ?
