I think the GT5 ones look to shiny to be used for damage comparison. Not even a scratch on the cars. Also I would love to know how the paint got scratched off the top of the bonnet in the first Forza screenshot.

Anyway....
What is important is the impact of damages on car handling (there is a setting for that in FM3).
What does GT5 do ? Only fancy graphics ? What it is good for ?

Done amateur racing since i was a kid. Rarely if ever have i seen a car lose a door from a front side crash. And rarely have i seen a front crash at 100mph were just the bumper falls off from a frontal impact. Let's not beat about the bush here, both are not realistic.
However one common thing a car does do is roll when you fook up a corner or get swiped from the side. Most crashes these days are mosty just scratches on the paint from light contact with someone else.
Also i think it is worth remembering those Prologue screens that came out. Remember how we thought wow this looks just like how it was on tv? Didn't quite turn out that way did it? This is the same engine Prologue was on, is technically the same game. So as much as i want those pics of GT5 to be real, i know they probably are not.

The replay shots merely add effects such as DOF and motion blur. The car models and lighting generally stay the same...

Though Forza 3 looks oddly bad in those shots... but then again, you don't really seem to be able to trust anything PD show...And who really cares that much?
