Amongst Hack'n'slash fans Ninja Gaiden Series is considered the pinnacle. Not for it's story ( GOW is much better story wise ) but the gameplay is so much better. The combat is a real art, as is the mastery of each weapon kind. Not to mention the insane speed of the game. GOW is a good series, but it's alot easier and no way as intricate as NG in the combat ( which is the actual point of a Hacker game. )

I agree with this. Ninja Gaiden 1 and 2 aren't really made for anybody less then hardcore. Get a casual gamer (without any real gaming knowledge of the controller and lack of skill etc) to play Ninja Gaiden and they will return it the next day in frustration with the difficulty. Spam any move on Ninja Gaiden and you will be cut down in seconds. Ninja Gaiden II wasn't as great as the original but I think that is because Itagaki was not in the right state of mind. He was constantly battling the president of Tecmo over unpayed bonus money from Dead or Alive 4 back in 2005 and was under pressure because the president and some other imployees were spreading unpleasent rumors about him within the company. He also had some crazy woman claim false sexual assault charges on him to try and make abit of money for herself. You can tell overall this all effected Ninja Gaiden II's development.
It is still a brilliant game, I have been playing it again recently. I'm on around chapter 12 or something on Mentor difficulty (difficulty below the hardest)at the moment storming Mount Fuji. Overall the game is pretty cheap in how it increases the difficulty though. On the original Ninja Gaiden on harder modes the enemy A.I actually got smarter and they used group tactics. On Ninja Gaiden II however on higher difficulties they just throw in more enemies right from the start and they are hardest enemy variations you would only find in the last couple of chapters on Acoylte and Warrior mode.
On Mentor difficulty right at the beginning you get Black Spider Clan incendiary Ninja's and those Soldier Ninja's with rocket launchers and the ballistic rocket launchers (Fucking annoying bastards from the level with the fire fiend, who constantly spam the screen with a barrage of rockets) On Master Ninja mode you get the strongest variation of each enemy from beginning to end. So explosive white Ninja Archers, Golden variation of the winged demon's etc. Frankly its pretty lame.
There are also more glitches and frame rate problems present when you run past enemies instead of killing them. There is the rare boss glitch where you would defeat the boss but the battle would still continue leaving you unable to do anything.
I can't say much for Sigma series, never played it but from what I have seen it looks like a dumbed down, difficulty wise and more casual version of the game no gore etc.. With a better camera and a ton of pointless extras that really add nothing to the main experience.
I have read a article on the internet and the guy leading the Sigma projects said they are going to be making Ninja Gaiden III soon and it will have to be multi-platform.
