I was about to suggest SSX Blur, but then remembered you only have 2 nunchucks.... still, I would reccomend it anyway.
Boom Blox Bash Party is probably your best bet for 4 players using only Wiimotes.
I'd say ExciteBots too but I'm not sure if it's 4 player or only 2 player offline.

I don't like to base my decisions on reviews anymore... i found myself loving a few games i bought which got average-mediocre reviews, "The Munchables" and Sonic Uleashed come to mind
anyway, keep the suggestion coming :)
^^^ I know for a fact that Boom Blox BP is good stuff, but I've seen some reviews for Let's Tap and it seems kinda gimmicky, even if it is a value-priced title. But hey, to each his own, you might love the game for all I know!
Oh... and have you thought about some of the games on WiiWare? You can't go wrong with Tetris or Dr Mario, and there's some other pretty good games on there that support 4 players that I'm sure some people can recommend to you on here.

I have got to recommend Tetris Party, that game is just too fun. Dr. Mario RX is great too.
How technical is your game?
Boom Blox is great IMO. It is probably the best local multiplayer game out there besides Smash and MKWii. You might want to look into New Super Mario Bros. Wii when it comes out. It looks to have great 4 player co-op.
The light gun shooters have good 2 player co-op. House of the Dead Overkill is the best of the bunch but if you have an aversion to profanity/violence/or sexual innuendo it probably isn't for you.

^^ i actually have house of the dead overkill. i had decided the day i got the game to try it even though my mom was in the room. All of a sudden eff bombs everywhere, the black dude couldn't stop calling people motherf***ers, it was so funny. my mom wasn't paying any attention (luckily) but my friends had a good laugh :)
