Torillian has some great suggestions. I'd add Casshern Sins (action with a lot of introspection, very good), Full Metal Panic (It's a mecha/slice of life mix, and it's both types at their best), Ouran High Host Club (amazing romantic comedy, bested only by ToraDora), Eureka 7 (Another mecha, but the world it takes in is amazing), and Full Metal Alchemist (it's just OMG amazing).

^ I've also heard great thinks about Full Metal Alchemist... I think I've seen an episode of it at Adult Swim...
