Do you like action games, even if they are hard?
Obvious recommendations not worth my time - SotC, FFX, GoW etc. etc., so here're some underdogs...
How about SMT games besides Personas? Digital Devil Saga dilogy or SMT3: Nocturne? If you're not afraid of classic jRPG gameplay mechanics - check them out. Odin Sphere (the previous effort of Muramasa team), maybe? I got it just for fantastic art, gameplay wise - good brawler + some tiny RPG elements, not so bad, but nothing extraordinary.

The Digital Devil Saga games are a good way to get into the SMT series (if you can find them); they may very well change the way that you perceive JRPGs.
Klonoa 2 is indeed awesome. If you liked the original, it's an absolute no-brainer.
I loved the first Shadow Hearts game and have heard the second is even better, though I've yet to get into it. The third is said to be best avoided.
If you have an appreciation for story-based rhythm-action games, I strongly recommend Space Channel 5: Special Edition and Gitaroo Man.

What's the point in having a PS2 if you don't have a Katamari game? You should address this severe Katamari deficit.

Most everybody else is going to recommend stuff you need to look into. Shadow of the Colossus, ICO, what have you. Final Fantasy XII is fantastic if you go into it with the right expectations (equipment is more important than levels, chain enemies to make more money, the characterization doesn't work like most RPGs) and has one of Matsuno's better stories. There are lots of good games.
I am going to recommend a good game that is hard. It is silly, it is puerile, it is made by the folks who made Viewtiful Joe.
It may nont be your cup of tea, but at least you'll have tried it.

I have a feeling he's going to recommend Godhand. I'd recommend it as well, but your views on No More Heroes and Conker's suggests you don't like crazy perverse meta humor as much as me. Still it should be cheap.
I personally recommend the Sly Cooper series.

Good series of platformers with decent gameplay variety complimented by likeable characters. Each game also has a few fundamental changes that differs it from the other two. Also, they should be cheap.
EDIT: Wish I had finished my post before Khuutra posted his response, but It's nice to know I was right anyways. =P
