The PS3 just uses a FAT32 filesystem where the contents are encrypted. You can't get the data off, but partition managers shouldn't worry about that.

Yes you can. I've heard you can't get access to the internal bluetooth, but most wireless keyboards come with a receiver unit that you plug into a USB port, and that works just fine.
About the internal bluetooth, I've never managed to get bluetooth working under Linux at all - I think I've been unlucky and the bluetooth dongles I've had just didn't have any Linux drivers available. I'm not sure if the PS3 bluetooth is really blocked, or just doesn't have any driver yet.
