use a different recipe? theres this restaurant in my town that makes these AMAZING veggie burgers - and they are mostly spinach.

Olives are great in some veggie burger recipes, you barely notice them but they add a lot.

Anyway, I would use artechoke, that seems like it could do the trick.

Just leave em out, Iv never heard of olives being in veggie burgers before anyway.

I'm think I'm just going to go with adding peppers. I want to add jalapenos and even have some fresh ones (they were like a penny or two a piece at Central Market!) but I might just go with some bell peppers since the wife isn't big on spicy food.

Use a milder pepper than jalapeno - like poblano. Then you and your wife can be happy.

Hmm, I like pablano's I'll try that instead of a bell pepper.

Im just glad you aint using olives, they make me squirm!

Be aware that black olives are salty. So in removing the black olives, you are removing salt from the recipe.  If they don't come out right, that could be part of the problem.

By the way, I dislike Guy Fieri. Alton Brown is the best. :)

I hate olives as well.
