I've seen videos of both and I think UNS by FAR will be better. I don't even think theres a legitimate argument against it. Then again, neither is out...so who knows?
Nuns although I need to see how the story mode works for Nuns, all I have seen is talking (tsunade and Orochimaru) and then a big boss fight. I wanna see the running around, jumping and fighting normal ninjas. I'll give it up to BB, it doesn't look as far behind of Nuns as I once thought, I saw a video recently and it was pretty impressive. Rock Lee's leafy kicks (forgot the name) where he kicks and leaves goes up is pretty damn sweet in BB (and BB is a much better name). All in all, Nuns because the 3D fighting for naruto is fresh and hasn't been done before, while I've played the PS2 and GC naruto games and they are not all that great.

personally UNS, but BB looks fun, but still UNS ftw for me
If UNS has the music featured in that trailer (though I doubt it because it looks edited) then UNS by a landslide, that tune is my favourite in the anime and it pisses me that it has never been featured in a UN game.
Music rant aside, UNS looks a lot better, covers more episodes of the series, on overall looks to be a big improvement of the already great Ultimate Ninja series. I can't speak much of Broken Bond because I haven't played RoaN, but UNS impresses me more
