So, Gears of war. If you don't have a second player, you have a computer controlled guy with you the whole time. Dom.
Anyway, Co-Op was the key feature missing from CoD4, and it's awesome in any FPS or TPS. It's fantastic. You've just never had a really good co-op session. If you did, for instance, play through Gears of War with a friend, you'd understand why some people really like that feature.
Calling it a bullet point, or unimportant, is the same as calling online play a bullet-point, or unimportant. It's actually great, it is significant that the game is missing it. It's not gamebreaking(see CoD4) but it is important.
As for how many people use it...well I know for Gears of War, everybody I know that has the game, uses it, and it is the only reason the game has so much replayability. You can let your dad, or your girlfriend, or whoever, play player 2. The game is designed ground up for smart co-op, even allowing for you to split up at certain points in the game, and take different routes. It is definitely the reason the game is still so highly lauded, and the fact that you were so harsh on co-op, means that you haven't experienced a great session of it, and by "great" I mean standard.
That, or you're making excuses for the game.
Because though a shooter can be fantastic without co-op(RE4, CoD4) there is no doubt that these games would have been played longer, and enjoyed more if that deceptively hard to insitute feature was added.
You wanna know why Gears kicks so much ass? It's the best co-op shooter in existance.

For the record, I really hope that KZ2 does end up with co-op.
