You can do whatever you want. Even though it set itself automatically at 1080i, many games have a max reslution of 720p and when you launch the game, the resolution changes to that and then goes back to 1080i when you quit back to the XMB.

If you notice a difference and like 720p better, then force it to 720p. If you don't really care, leave it how it is and it'll automatically set the resolution depending on the max resolution of the game.
