Based on some previous posts, I think some people are saying they relax by blowing off steam while playing something familiar (which is a little different).  For me classic arcade games (Donkey Kong, Centipede, Dig Dug, etc...) fulfill this role.  It's relaxing in the sense that I can let the stress go, even though a lot of these games are very twitchy.

Same, generally some Might & Magic or Wizardry game, though Baldur's Gate of Lords of Xulia.

Also, as morbid as it could sound from the names of the games, Afterlife and Banished are some of my games I mostly relax to. Afterlife, as every building built WILL cost tons of maintenance, is mostly a game of patience early on, While Banished with the Colonial Charter mod basically becomes "waiting a year for the trader to come back and hope he has some new crop seeds this time" once you established your town properly.
