FromSoft would just continue to do what they've already been doing for the past 15 years. Some PS-exclusive games, some multiplatform.
They might self-publish now or publish under Sony.
I just checked their list of companies. I don't see any major manga publishing company under them, no major anime studio either. Anything substantial I need to know?

That's how I see it too. Except there's a strong chance multiplatform means PS5 + PC lol.
Currently, it looks like Kadokawa Corp has a market capitalization of over $3 billion. Sony would probably need to spend double or triple that amount to cover cost of assets and outright buyouts of shareholder shares since the company is publicly traded.
Kadokawa always made the most sense for Sony overall.
It makes you think what Sony is going to go for after they spin off their financial division. Square Enix, Capcom, and A24 seem like the most likely targets to me.

A 100-200% takeover premium is insanity. It'll be almost surely less than 100% and likely less than 60% (a majority of them are).
I see a lot of people online confident that Sony would allow Fromsoft to continue to be multiplat. Where exactly is this coming from? Nothing in Sonys history other than Bungie suggest that would be the case. That only happened because Bungie made it part of the requirement for being purchased. Something Kadokawa wouldn't give a damn about.
