Because most people did not enjoy their purchase.
I can only assume that the Assassin’s Creed Ezio remasters will be in a better state when they come to Switch at around the same time as physical GTA Trilogy hits stores. There’s not many expecting one last patch to hit next week to get GTA into adequate port territory on Switch.
There has been work done to lift it from broken or bad to poor or just below mediocre as far as ports go, but I don’t think any studio can salvage that into something you could call a good port. No publisher would give them the time or budget.

The Ezio collection won't be a mobile port done by an incompetent studio. It should be fine if the Rebel Collection is anything to go by.
About 10M more than it should have. But well I guess there were 10M people happy with their purchase.
