Well, the generation itself started from 360 release, but the competition in the market started with PS3 release, and ended 2 weeks later when Wii got released.

Nintendo games sell only on Nintendo system.

7th gen of "home consoles" started with 360, sure, but the first sentence of that Wikipedia page is actually "In the history of computer and video games, the seventh generation began on November 21, 2004 with the North American release of the Nintendo DS, followed by the PlayStation Portable on December 12, 2004."



That doesn't really make any sense unless you want your fans to wait for your next console.

I think you are taking the quote a bit too seriously. The exact quote was, I believe "The next generation doesn't start until we say it does", and was simply referring to the fact that they were the big kids on the block at the time.
