I think the devs should get outside more in that case :) I've got over a hundred trees of various sizes and species on my property and have seen plenty storms as well. Don't tell me how they should move lol. Witcher 3 made me feel I was in a haunted forest, it was quite distracting at some points.
As for old masonry, I often cycle by this old mill. 
Not that it doesn't look good in the game and mods, yet games often exaggerate bump mapping to the point it looks really fake. Often it's a case of less is more. At least I assume these mods are going for realism.
The updated geometry looks really good though. The less angular the better.

There are trees out there that tend to blow the way they have in the game, not every tree on this planet blows in the exact same manner.
I've seen different masonry works from both Celtic and Polish works, but I honestly prefer the rework to the vanilla due to the edges and general level of detail. Most of the other stone reworks shown in the video outdo the vanilla textures, most of which end up looking rather pixelated and smudgy.
I would assume the modder is going for realism. The other mdoder with the lighting mod, half and half from what I can see.

True, it's an improvement of the vanilla artwork that's low detail in many places. It looks hyper realistic though, which is not a bad thing. You can reach the same hyper realistic effect with photography.
As for the trees, this is aout as animated as they get in my backyard
I would like to see storms like that in a game some time.

Honestly, the area that Witcher 3 is set in doesn't look like the kind of place where everything would be calm and hot, like say Florida during the summer.
I think if they went with individual trees moving in different directions and all at different speeds, the consoles would probably buckle under such a requirement. Think of those cheese wheels from Skyrim.

For me and some others out there, the originals look rather low in texture quality.
