Does anyone else think that down the line they might (or could if it's even possible) release a dock with additional hardware, kinda like how they did with the N64 ram, etc? Instead of an upgraded system like the Scorpio or pro?

No.
Its a expensive way to solve a issue of it being underpowered.
Its better to have things on one chip (esp when this small) vs useing 2, and haveing some kinda SLI solution.
Its not gonna happend. Too expensive to be practical.
At $80 I'm expecting it to come out with a second switch GPU for SLI.

XB1 S combined with Switch dock.
Switch gets HDMI-out, power, hard drive.
XB1 gets a Wii-U controller
Replacement dock = $90
X-Dock 1 = $200
