Not sure that's true. I think most consoles gamer's like variety.
There are, of course, different selections of games on the different systems, and some have a larger selection of games, a bigger range, key high profile franchises in a genre (like street fighter of final fantasy), or a different focus, but to say that it is the gamers on these system that don't want to play a range of stuff is a leap and unfair. There are plenty of industry reasons explain the differences.
XBOX doesn't get many (if any) JRPGS because people in Japan don't have the system. I don't have an xboxone but I owned a 360, which I never used because I'd opt for my PC every time, but it still had a fantastic range of games, well beyond the shooters it tends to be associated with.
The Wii U bombed and has been snubbed by third parties but Nintendo still makes sure it has a good example of almost every genre on it.
Sony might talk about indie games a little more at e3 than the others but they all get a great selections of indie games.
The PC is of course the master race of variety by far and I tend to feel that a PC plus Nintendo keeps me covered.
