WiiU list (at least) is incomplete.

It wans't the sales on WiiU or 3DS for EA. It was that Nintendo forced them to use their Nintendo Network. And EA had the better cards having Nintendo sell so few Wii Us and 3DS...
We must never forget "unprecedented partnership"
Although I don't doubt that Switch will get decent 3P support (mostly due to carrying on the handheld line), I'd really question lists like these. More than anything because they've obviously done their best to 'beef up' the Switch list by adding things they didn't for the Wii U list.
Lets look at the Wii U list for a second. It's all major publishers (bar one I can't tell in the top right, does that say Tetris Online? O.o). All of those publishers had multiple games in development for Wii U from multiple studios - for example, EA Canada were developing FIFA 13; EA Tiburon were developing Madden 13 and Criterion were developing Need for Speed. You can do the same for Ubisoft; Bandai Namco etc.
Then compare to the Switch list. For example, you've got Square Enix on there and then a subsidiary of Square Enix - Tokyo RPG Factory. They're the same company for all intents and purposes. You've got Grasshopper Manufacture and GungHo. Traveller's Tales and WB. Heck, you've got Frozenbyte (indie company) and GamesTrust - the latter being the publisher that the former has signed a deal with.
My point is, they've beefed out the Switch list to make it look better by adding companies that are effectively the same. That doesn't mean Square Enix won't be working on more than one Switch Project (whatever Tokyo RPG Factory is doing + FF XIV + DQ 11 + whatever else), but the same could be said for the Wii U and I'm sure 3DS lists, but they were listed under one thing.
Never mind that they've included a list of engines supported by the console at the bottom. Is it really shocking that the scales-to-nearly-everything Unity engine is on there; that also supported Wii-U pretty much from out of the gate? :P
List wars like these are fun, sure, but that's all they are - lists. I doubt the Switch list is a full representation of everyone on board, just like I doubt the Wii U and 3DS lists were.
I hope some of the Switch partners actually develop. I want to try Rocket League, or something.

EA also want bundle deals generally for their games. So will be nteresting to see how that works day 1 (assumign they have a sports game day 1).

They need to market it aggressively for the Europeans for FIFA to work. The PS is king in europe but Nintendo could at least beat Microsoft and become the second most successful console manufacturer in EU
