A combination of majora's mask and oot would be perfect in terms of sidequests. They really went bananas with the sidequests in MM but the system for it was really cool, that you didn't only need to find them but also be there at the right time.

chain of side quest mentiond above are good - plus I would like to see those side quest accomplished by other characters like bonus stages in RE: 4 for Wii.
