Nintendo themselves stated that back when Super Mario Bros 2 came out in the US. Also, they reference birdo as "him" in various games, but they also use "she" and "it".
For all those who think Nintendo is kiddy, they really like to mix it up in their video games, but not really come straight out and say it. I mean, Yoshi and Birdo are together, yet Birdo is a guy, who dresses like a girl....
