Yes.. that would be no problem.. not if you have the money..

Think of a bumbercar with a speeder and break/back pedal .. a "smart" bumbercar with touchpad next to the wheel..

I think they will use some kind of hydraulik tracks and ports.. and projectors to make the tracks.. that way they should be able to make all kind of stages.. from winter to dessert pretty fast:

But back to the weapons.. (and remember the touchpad)

First the boxes.. They can "project" the boxes down or the could even (becourse it would be insane.. and they have the money) do it from below. And then offcourse have a big computer to keep track of all boxes and what weapons people have..

Drive over a box.. the touchpad shuffles and you get a weapon.. should not be that hard to program.

Boost and trible boost and even stars are easy made becourse thats only in the car and about the speed (damage)

Then we have shells and banas.. And I imagine that after touchpad shuffles and lets say green/red shells are picked hand geture should do the job.. project the shell down/up on the track (or mayby even from the car) and have a good speaker system.. mayby even some kind of "rumble".. and then you have it.. :)

A Mario Kart ride is obvious, so I would like to see what the other rides would look like

The Zelda attraction will probably just be a tram to and from the different theme parks...
They'll call it A Link Between Worlds...

I would have to think a new Jurassic Park/World attraction has to be in the making, the current one is very old and after the box office the new one did they probably want to do something more with that franchise. 

Maybe a new Jurassic World/Mario Kart/Zelda/Warcraft IP for the new park, while a Super Mario Bros. and Pokemon attraction replace some things in the old park?

But yeah from what I've heard Universal doesn't have the land for a new park. That said Universal is probably feeling the heat from Disney, the new Disney park in Shanghai is supposed to be incredible.
